| 7 Oct 2013, 19:19. Albergue Ecológico El Beso in A Balsa (Spain) was an albergue on the Camino Francés that I sought out based on its reputation for serving plant-based (vegan) meals. Here in the albergue’s second-floor dining room, hospitalera Jessica ladles tomato sauce over ziti as she prepares the pilgrim communal dinner. This delicious meal additionally included red beans with sautéed red pepper and onion, homemade whole wheat bread, homemade chocolate cake, red wine, and herbal tea with freshly cut thyme.
